Cookie Butter Cut Out Sugar Cookies

I had so much fun creating this recipe and thankful to my client for offering me the challenge! If you have been following me lately, you know that I have been fixated with all things cookie butter! Cookie butter mini cakes, red velvet cookie butter cupcakes, even cookie butter popcorn! So enjoy this new creation: Cookie Butter Cutout Sugar Cookies.

To make cookie butter cut out sugar cookies:

  • 8 ounces cold, cubed butter

  • 7.5 ounces granulated sugar

  • 2 large eggs

  • 20 ounces all purpose flour

  • 2.5 ounces corn starch

  • 3/4 teaspoon slat

  • 1 teaspoon vanilla extract

  • 1 teaspoon vanilla bean paste

  • 2 tablespoons cookie butter

  • 8 crushed Biscoff Cookies

  • 3 tablespoons MELTED cookie butter

INSTRUCTIONS:

  1. Pre-heat oven to 375 degrees Fahrenheit.

  2. Cream butter and sugar together until light and fluffy.

  3. Add eggs and mix until incorporated.

  4. Add flour, cornstarch, and salt and mix on low until combined.

  5. Turn mixer up to medium high and mix until dough pulls away from bowl.

  6. Stir in vanilla extract, vanilla bean paste, and 2 tbsp cookie butter.

  7. Roll out dough.

  8. Coat rolled dough in the crushed cookie crumbs and press firmly into the dough.

  9. Drizzle Cookie butter over the cookie and press in with back of spoon or spatula.

  10. Cut out shapes and bake on parchment lined cookie sheet for 11 minutes or until slightly golden.

  11. Let cool and decorate as you please or eat as is.

Makes 30 regular sized cookies and 20 large sized cookies.
